The Vin Santo of the Fagnani family was the wine offered for important occasions or when a guest "came to wake up".

The ancient tradition is all in two elements:

The first seems trivial, but not at all: to produce great wines you have to start from great grapes. To ensure superior quality grapes, it is important to have maniacal attention to the vineyard and to devote oneself to cultivation in full respect of nature and the territory, its times, and cycles. Finally, manual harvesting also guarantees excellent selection and respect for the plant.

The second is the cellar with the various processes that range from the natural drying of the grapes, strictly on reeds, to the passage of the "mothers" (dense residue of the wine of previous years) from the kegs of one year to those of another.

Harvesting and processing:

the organic grapes of Malvasia del Chianti and Trebbiano Toscano are selected and harvested manually in boxes. They are then left to dry on racks until the beginning of December and then pressed and the must obtained is placed in barrels of 100-225 liters where it ferments slowly for years. This is followed by a passage in steel for a month and bottling. After aging for at least two months in the bottle, the Vin Santo is marketed.

Organoleptic characteristics

Color: deep amber yellow, clear

Bouquet: intense, clean and pleasant with notes of raisins and candied fruit, followed by aromas of honey, vanilla, dried fig and hints of walnut.

Taste: The taste is full-bodied and intense, very balanced, with the sweetness and warmth of alcohol well balanced by the freshness. The long finish.

Alcoholic content: 15% vol

Serving temperature: 16 C

Recommended pairings: Aged cheeses, dry pastries
